PORK PEAMEAL BACK BACON

Leaner and juicier than regular bacon, peameal bacon is wet-cured pork loin trimmed and rolled in cornmeal, creating its distinctive yellow crust. Originally, it was rolled in crushed yellow peas, hence the name. In the early 1900s, Toronto was one of the leading pork manufactures, earning Toronto its nickname, Hogtown.
