If you're looking for a quick and healthy snack to get you between meals, try this easy to make peanut butter and apple snack!
1 apple, cored (I used Granny Smith)
1/2 tbsp lemon juice (optional)
2 tbsp smooth natural peanut butter
1/2 cup Greek yogurt (plain or vanilla)
Toppings: e.g. cacao nibs, goji berries, dried blueberries and sunflower seeds - but you could use whatever you like!
- Mix peanut butter and yogurt together in a bowl.
- Slice cored apple cross-section wise into 6-8 slices. OPTIONAL: Toss apples in lemon juice (not necessary but helps with the apple slices not going brown).
- Spread peanut butter/yogurt mixture onto each apple slice and add your toppings.
- Enjoy a delicious treat for kids and kids at heart!
